Food and Beverage Director – Pierre Leon

Food and Beverage Director Pierre Leon has been in the food and beverage industry for over 30 years. He started out as a bus boy and worked his way up to director of operations. His career began in New Jersey where he also attended Paramus Community College with emphasis in Small Business Management. Pierre joined the CMAA in 1991 and has completed his BMI I, II and III educations. Since joining Boca Grove in 2007 Pierre has become even more astute to wine and the best foods to pair it with. When not planning a member’s event or overseeing the dining facilities, Pierre can be found playing golf, working on his hobby of videography or spending time with his children. In his career time span Pierre has also produced two community television programs and during a two-year break from food and beverage he was a social worker for Catholic Charities specializing in outreach/teaching for parenting and domestic violence prevention.  
 
 

Executive Chef – Dominick Laudia

Executive Chef Dominick Laudia, CEC, AAC, has been running the Boca Grove kitchen since 2012. Chef was most recently awarded the American Culinary Federation 2016 National Dr. L.J. Minor Chef Professionalism Award and the2016 Southeast Region Title for the ACF Chef Professionalism Award for his high standard of professionalism in today’s kitchen through certification, continued education and training, culinary competitions and community involvement. In his career tenure Chef Laudia has been awarded more than 20 culinary competition medals from the ACF, as well as Chef of the Year Award for 2001 and 2012 for the Palm Beach ACF Chapter. He has also been awarded the 2003 ACF Presidential Medallion, 2007 Palm Beach County School District Business Partner of the Year, 2009 Prostart Industry Participant of the Year and 2014 Professional Chef of the Year for the ACF Palm Beach Chapter. Chef Laudia is also involved in community service and outreach with the Quantum House at St. Mary’s Hospital, Children’s Home Society and The Lord’s Place, as well as helping out with the Culinary Institute at West Boca High School. When Chef is not slaving in the kitchen coming up with new ideas you can find him out on his boat with his wife Barbara. He is also proud of his daughter Jennifer’s teaching accomplishments and his son Daniel following in his culinary footsteps. 
 
 

Social Director – Marcia Chiarelli

Marcia Chiarelli has been a social director for 17 years. Working mainly in HOAs she made the switch to country clubs when she joined Boca Grove in 2014. Marcia graduated from Trinity University in San Antonio, Texas, with a Bachelor of Arts in Theater. After college Marcia made the trip to New York to become an actress. She is an award winning singer and actress who has won the Theater World Award and a Drama Desk Award Nomination for her performance as Amy in “Where’s Charley”. Marcia played the role of Sandy in “Grease” on the national tour and later on Broadway. She starred for many years as “Dee Stewart” on “As the World Turns” and before that as Christopher Reeves’ wife “Betsy Hart” on “Love Life”. For the rock and roll fans out there she was the female voice at the beginning of Meat Loaf’s “Hot Summer Night” single.
 
 

Assistant Food and Beverage Director – Carla Hull

Carla Hull started working at Boca Grove in the fall of 2004. While working on her Associates in Science degree and getting certified in radiology she started as a busser in our dining rooms. Carla quickly worked her way up to server/bartender before being named Assistant Food and Beverage Director in 2014. During her time at Boca Grove she has been mentored by two people, the past GM Chuck Lehner and by our Food and Beverage Director Pierre Leon. She is a CMA member and after twelve years working in a country club with a championship golf course, she has finally taken up the sport of golf! When not working or spending time with her husband and daughter, you can find Carla scrapbooking by hand, not digital.
 
 

Chef de Cuisine – David Sirko

Chef David Sirko, CEC, has been with Boca Grove since 2013 and has worked alongside Chef Laudia for over 20 years. He earned his Associates Degree in Culinary Arts from the American Culinary Institute in Hyde Park, New York, and became a Certified Executive Chef in 2012. Chef Sirko is a member of the American Culinary Federation, the World’s Association of Chef’s Society and the Palm Beach County ACF Chapter. He was awarded Chef of the Year for ACF Palm Beach Chapter in 2004, as well as many awards in culinary competitions. He does charitable work with Children’s Home Society of South Florida, Quantum House at St. Mary’s, Red Cross Relief, Childhood Hunger Day and Daily Food Bank to name a few. Chef Sirko is not allowed near an open flame, want to know why? Go ask him…
 
 

Executive Sous Chef – Chris Spitz

Chef Chris Spitz is the newest addition to the Boca Grove kitchen staff. After being a periodic contract employee he became the Executive Sous Chef in 2016. Born and raised in central Illinois, he attended the Culinary School in Joliet, Illinois, graduating with an Associate’s Degree in Applied Science. After fifteen years working in the Chicago area, Chef Spitz and his wife made the move south to South Florida. Before coming to Boca Grove, Chef Spitz worked at Frenchman’s Creek in Palm Beach Gardens, as well as the Fountains Country Club in Lake Worth. He is involved with the American Culinary Federation and has been voted Culinarian and Chef of the Year in the past. When not making food himself, Chef Spitz loves to indulge at Chinese buffets where someone is cooking for him. 
 
 

Head Hostess – Cecilia Kovago

Since 2005 the members at Boca Grove have been warmly greeted in the dining rooms by our Head Hostess Cecilia Kovago. She was born in Valparaiso, Chile, and studied at Hostoss Community College in Bronx, New York. When Cecilia is not seating guests at their tables she is spending time at the beach or in the gym.
