A Little Bit of Fried Chicken

There is no other way to celebrate “National Fried Chicken Day” then by having some good old fashioned “Southern Fried Chicken”. Not only did Boca Grove’s Executive Chef Dominick Laudia make it today’s lunch special, he also shared with us the recipe.
 
For the Fried Chicken:
2 cups                   Buttermilk
1 Tbsp                   Garlic Powder
1 Tbsp                   Onion Powder
1 Tbsp                   Salt
1 Tbsp                   Black Pepper, Ground
1 each                   3 lb. Chicken cut into 1/8
 
Method:
Combine all.
Brine chicken for 12 hours.
 
For the Breading:
2 cups                   All-Purpose Flour
2 cups                   Wondra Flour   
1 cup                     Cornstarch
 
Method:
Combine all dry ingredients.
Drain chicken from liquid.
Dredge in flour mixture.
Heat oil in fryer or deep skillet to 300 degrees.
Fry chicken until a light golden-brown color.
Remove and place on pan with a screen.
Turn up temperature to 350 degrees.
Return chicken and fry until golden brown.
Remove and place on pan with a screen.
Check internal temperature with a meat thermometer.
160 degrees is needed.
If temperature is less, place in a 350-degree oven until the 160 degree is reached.
Serve with mashed potatoes and your favorite veggie.
 
Now you can enjoy fried chicken every July 6th, as well as all the days in between.
