As American as Apple Pie.

May 13th is “National Apple Pie Day” and as we all know the best way to celebrate national days is to EAT something delicious. Boca Grove Executive Chef Dominick Laudia has shared with us his Apple Crumb Pie recipe so that we can all celebrate “National Apple Pie Day” the right way, eating something delicious.   
 
For the Pie Crust:
12 tbsp.                Very Cold Unsalted Butter
3 cups                  All-Purpose Flour
1 tsp.                    Salt
1 tbsp.                  Sugar
1/3 cup                 Very Cold Vegetable Shortening
6 to 8 tbsp.            Ice Water
 
Method:
Dice the butter and return it to the refrigerator while you prepare the flour mixture.
Pulse the flour, salt and sugar in a food processor a few times to mix.
Add the butter and shortening.
Pulse 8 to 12 times, until the butter is the size of peas.
With the processor running, pour the ice water down the feed tube and pulse until the dough begins to form a ball.
Dump onto a floured board and roll into a ball.
Wrap in plastic wrap and refrigerate for 30 minutes.
Cut the dough in half.
Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn’t stick to the board.
Fold the dough in half.
Place in a pie pan and unfold to fit the pan.
 
For the Filling:
2 lbs.                     Apples – Peeled, Cored and Sliced
¼ cup                    Lemon Juice
2/3 cup                  Sugar
2 tbsp.                   Cornstarch
1 tsp.                     Cinnamon
¼ tsp.                    Ground Nutmeg
 
Method:
Mix all ingredients in a mixing bowl.
Toss until it is mixed well.
Set aside.
 
For the Topping:
1 ½ cup                 Flour
¾ cup                    Sugar
2/3 cup                  Cold Butter, Diced Small
Pinch                     Cinnamon
Pinch                     Nutmeg
 
Method:
Place all ingredients in the food processor.
Pulse until it resembles fine crumbs.
Do not over mix.
 
Assemble:
Heat the oven to 350 degrees.
Pour the pie filling into the pie pan.
Top with the crumb topping.
Bake until the filling bubbles and the crumble turns a light golden brown.
Serve.
 
Serve warm with vanilla ice cream on a summer afternoon while watching baseball. You can’t get more American than that!
