October Equals Pumpkin Cookies

October 1st is “National Homemade Cookie Day” and this is the month for pumpkins, so here is a recipe for Pumpkin Cookies with Cream Cheese Frosting from Taste of Home. These cookies will get your October started on the right foot, and taste buds.
 
For the Cookies:
1 cup                     Butter
2/3 cup                  Brown Sugar, Packed
1/3 cup                  Sugar
1 each                   Large Egg
1 tsp                      Vanilla Extract
1 cup                     Canned Pumpkin
2 cups                   All-Purpose Flour
1 ½ tsp                  Ground Cinnamon
1 tsp                      Baking Soda
½ tsp                     Salt
½ tsp                     Baking Powder
1 cup                     Chopped Walnuts
 
Method:
Heat the oven to 350 degrees.
In a large bowl, cream the butter and sugars until light and fluffy.
Beat in the egg and vanilla.
Add the pumpkin and mix well.
In a separate bowl combine the flour, cinnamon, baking soda, salt and baking powder.
Gradually add to the creamed mixture and mix well.
Stir in the walnuts.
Drop by rounded tablespoons two inches apart onto a greased baking sheet.
Bake for 8 to 10 minutes or until the edges are lightly browned.
Remove to a wire rack to completely cool.
 
For the Frosting:
¼ cup                    Butter
4 oz.                      Cream Cheese
2 cups                   Confectioners’ Sugar
1 ½ tsp.                 Vanilla Extract
 
Method:
In a small bowl, beat the frosting ingredients until light and fluffy.
Frost cookies.
 
Notes:
Store in an airtight container in the refrigerator.
Yields 4 dozen cookies.
 
Fall just showed up in cookie form. Yum!
