A Light Labor Day Dish

Labor Day is near and the mark of summer vacation fun is at a close, so we want to make sure you have an easy and light dish to allow you to celebrate with little fuss. Boca Grove’s Executive Chef Dominick Laudia has shared his “Labor Day Cool Summer Grilled Shrimp Gazpacho Soup” to keep it light and fresh this Labor Day.  
 
For the Shrimp:
8 each                                   Shrimp, Peeled and Deveined
2 tbsp.                                  Olive Oil
2 tbsp.                                  Cilantro, Chopped Fine
As needed                           Salt and Pepper
 
Method:
Toss the shrimp to season.
Grill the shrimp for 3 to 4 minutes on each side.
 
For the Gazpacho Soup:
2 cups                                   Tomato Juice
2 cups                                   V-8 Juice
2 oz.                                      Zucchini, Diced Fine
2 oz.                                      Yellow Squash, Diced Fine
2 oz.                                      Green Pepper, Diced Fine
2 oz.                                      Carrots, Diced Fine
2 oz.                                      Celery, Diced Fine
2 oz.                                      Tomato, Diced Fine
2 oz.                                      Basil, Chopped Fine
2 oz.                                      Cucumber, Peeled, Seeded and Diced Fine
2 oz.                                      Red Wine Vinegar
2 tbsp.                                  Tabasco
 
Method:
Combine all together and chill.
 
To Assemble:
Pour soup into a bowl and place two shrimp on top.
Serves 4.
 
You can relax on Labor Day with this easy dish.
